Festive veggie fajitas filled with mushrooms
A garlicky wine sauce is well known as the basis for the classic Italian dish, shrimp scampi.  I thought the sauce would be a great preparation for chicken thighs.
The microwave does most of the heavy lifting in this delicious fish dinner.
I love lamb satay with a spicy peanut sauce but didnā€™t want to take the time to make my own sauce. So I was delighted to find a bottle of the sauce at the market. This meant that I could make the satay with very little effort.
